Belle Glos built this rosé backwards from tradition — Joe Wagner sources Pinot Noir grown specifically to become "Oeil de Perdrix," French for eye of the partridge, a nod to its pale pink, copper-tinged hue. Whole clusters get a light press, then the wine spends a brief stint in French oak to round out its bright acidity. Expect white peach, strawberry, and a citrus-zest finish. Pour it chilled alongside grilled salmon or a summer salad.
