Beit El Marselan Cabernet Sauvignon comes from Beit El Winery, a family-run estate in Israel's Binyamin Hills founded by Hillel and Nina Manne in 2001. The vineyards sit 800-900 meters up on terra rossa soil, where warm days and cool nights slow ripening and deepen flavor; the Cabernet Sauvignon vines here are dry-farmed with no irrigation. Marselan, a Cabernet Sauvignon cross, typically brings dark cherry and cassis with soft, fine tannins to the blend. Pour it alongside grilled lamb or aged hard cheese.
