Beit El Estate Cabernet Sauvignon comes from the Beit El winery's own vineyards in Israel's Judean Hills, planted in iron-rich terra rossa soil roughly 850 meters up in the central mountain range. Low yields and three weeks of skin maceration build concentration, then the wine spends 20 months in all-new French oak. Expect black currant, black cherry, and plum backed by black pepper, licorice, and chocolate notes, with firm, persistent tannins and bright acidity keeping it lifted. Pour it alongside grilled lamb, braised short rib, or aged hard cheeses.
