Banshee built its name on Sonoma Coast pinot, but this Cabernet heads south to Paso Robles, sourcing fruit from west-side sites like Adelaida and Templeton Gap, where limestone soils and Pacific-cooled hillsides slow the grapes down. The result is deep purple-ruby in the glass, layered with blackberry, plum, anise and graphite, finishing on fine, velvety tannins. Pour it alongside grilled short ribs or a grass-fed burger off the flame.
