Aura Di Valerie Amarone della Valpolicella comes from Italy's Veneto region, where corvina, corvinone, and rondinella grapes are hand-harvested and dried for roughly four months using the traditional appassimento method — concentrating the juice into something rich and full-bodied. After a slow fermentation, the wine ages two years in oak, developing notes of dark-roasted coffee, chocolate-covered cherry, and pencil shavings over an earthy backbone.
