Here's a blanco with a secret: after distillation at Destileria Cascahuin in El Arenal, Jalisco, it rests three to four weeks in brandy casks that once held Oaxacan mezcal. It stays technically unaged, but picks up a whisper of smoke. Made by master distiller Salvador Rosales from lowland valley agave, it's earthy and peppery, with roasted pineapple, warm butter, and vanilla.
