Alma de Judas' Espadín Joven comes from a small mezcal house in Nejapa de Madero, Oaxaca, where a maestro mezcalero cooks 100% espadín agave — matured seven years — in a stone-lined oven before crushing it with a horse-drawn tahona. Fermentation happens slowly in pine vats with spring water, then the mezcal is double-distilled in a copper still to 94 proof. Crystal clear, with a smoky, roasted-agave nose and a smooth, sweet palate, it's built for pairing with rich, fatty dishes like beef or pork broth.
