Corvina, Corvinone, and Rondinella, with a splash of Sangiovese — Allegrini's Palazzo della Torre gets its depth from a partial-drying trick borrowed from Amarone country: about 30% of the grapes rest and concentrate before blending back with the rest, then age 15 months in French oak. The result is a Veronese red layered with ripe cherry and plum, forest floor, a whisper of chocolate and licorice, and a violet-tinged finish. Pour it alongside braised short ribs or aged pecorino.
