Village mezcal from San Luis del Rio, high in Oaxaca's Tlacolula valley, where mezcalero Don Baltazar Cruz Gomez cooks espadin agave in an earth pit oven, crushes it by hand, and ferments the mash in open pine vats before double-distilling in copper. The result is rich and fruity, layered with smoke, cooked agave, honey, and a mineral edge drawn from the region's dry, sandy, rocky soil.
