Mezcal named for the village that made it: San Baltazar Guelavila, a rocky, high-elevation pocket of Oaxaca's Tlacolula Valley. Father-and-son mezcaleros Cosme and Cirilo Hernandez roast 100% Espadin agave, ferment it with wild yeast in open pine vats, then double-distill in a small copper pot still. The result leans bright and mineral: citrus and pineapple, a floral lift, a whisper of ash and salinity behind gentle smoke. Sip it neat at room temperature, an orange slice on the side.
