Named for Dr. Pierre Ordinaire, credited with concocting absinthe back in 1792, this verte is distilled in Forcalquier, in the south of France, using a hearty measure of grande wormwood alongside anise, fennel, coriander, and peppermint. The nose leans anise and licorice with a whisper of mint; the palate carries that same herbal backbone before wormwood's bitter edge closes things out. Louche it slowly with cold water and sip solo, or use it as the anise note in a classic cocktail build.
