Cuishe is one of the more unusual agaves in the karwinskii family, growing tall on a woody trunk and taking years to mature. This batch comes from Eleuterio Perez, known as Tío Tello, who has been making mezcal in El Nanche, Oaxaca for over fifty years. He roasts the agave in a conical oven over mesquite firewood, mashes it by hand with wooden hammers, then distills in a single copper still. Expect stone fruit, sweet spice, and a whisper of lavender. Sip it neat, slowly.
