Named for the centzon-totochtin, the "four hundred rabbits" of Nahuatl myth said to preside over agave and revelry, this Oaxacan joven earns the folklore. Espadin agave is roasted in a stone horno, crushed under a horse-drawn tahona, fermented in wood, and twice-distilled in copper pot stills. Unaged and bright, it carries a campfire wisp, sweet cooked agave, and fresh wood on a soft finish. Sip it neat, or let it anchor a smoky margarita. Sip Something New.
