Gold and Aged Rum

Rum that has spent time in oak, from one-year golds to decades-old blends. Read the age statement, not the color.

In one sip

Gold and aged rums are rums that have spent time in wood, usually oak barrels that once held bourbon. A young gold rum is light and vanilla-sweet; a well-aged Barbados or Jamaican rum can sip like a brandy, with dried fruit, toffee and spice. The catch: color is easy to fake, and rum age rules are looser than whiskey's.

Where it started

The Caribbean producers' trade body tells of a Dutch sea captain reporting that, after the voyage home, the spirits were "smoother to the tongue and have acquired a golden colour."10 Today, it says, almost all rum is aged in oak barrels.10 Appleton, which documents distilling from 1749, makes its aged rums on a single estate in Jamaica's Nassau Valley.9

Where and how it's made

Under U.S. rules, "age" means the time spirits spend in oak barrels after distillation and before bottling.1 An age statement on rum is optional, but if one appears it must state the age of the youngest spirit in the bottle.2 The EU allows caramel in rum only to adjust color, and never flavoring.5

Most aged rums mature in ex-bourbon casks, sometimes cognac, sherry, port or wine casks, and a move to a different cask for the final stretch is called finishing.3 Mount Gay names three cask types, American whiskey, bourbon and cognac, and calls its method "tropical static ageing."8

Producer and regional rules add structure. WIRSPA's Authentic Caribbean Rum marque has a "Matured" tier for rum 100 percent matured for at least one year and a "Deluxe" tier for at least five years.4 Jamaica's 2024 GI ruling says Jamaica Rum may be aged only in Jamaica, in approved food-grade wooden barrels no larger than 250 liters.6 The Spirits Pool, in whose name the GI is registered, said the ruling means no sugar or other material is added after distillation.7 Brazil goes further than most: its legal definition of rum requires distillates aged totally or partially in oak or equivalent wood.11

How to taste it

Use a tulip or brandy glass, neat, at room temperature. Look for vanilla and coconut from American oak, dried fruit from sherry or port finishes, and banana or pineapple esters from Jamaican pot stills. A very sweet, syrupy finish can point to added sugar, which some markets permit and others cap. Pairings: dark chocolate, crème brûlée, aged Gouda.

Styles and what the label means

  • Gold / amber rum — amber from wood and often caramel; the color alone is no proof of aging.3
  • Age-stated rum — a number in years; in the U.S. it is the youngest spirit's age.2
  • ACR Matured / Deluxe — matured at least one or five years under the Caribbean marque.4
  • Cask-finished rum — a final period in a second cask such as port or sherry.3
  • Rhum vieux — French-Caribbean aged rhum with legal minimums. rhum-agricole-and-clairin →
  • Cachaça envelhecida — Brazil's aged category. cachaca →
