Calvados

Normandy's cider and perry brandy: three appellations, pot or column still, at least two years in oak, and an apple you can taste.

In one sip

Calvados is distilled cider. Normandy grows small, tannic cider apples and perry pears, ferments them into cider and perry, and distills that into a spirit that smells of fresh apple when young and of baked apple, vanilla and walnut after years in oak. It is not "apple eau-de-vie": the fruit is fermented into cider first, and the cider is what goes into the still.

Where it started

The first written reference to cider distillation in Normandy is a 1553 manuscript by Gilles de Gouberville, a Cotentin gentleman.3 The name "Calvados" arrived with the French departments in 1790.3 Calvados Pays d'Auge won AOC status in 1942, and a decree of 9 September 1942 gave ten regional names a lesser status that exempted them from wartime alcohol requisitions.3 Those ten were merged into the single Calvados appellation in 1984; Calvados Domfrontais followed in 1997.3 In the United States, Calvados is a protected type of apple brandy that must be made in France under French rules.7

Where and how it's made

Orchards cover 8,000 hectares and include 230 varieties of cider apples and 139 varieties of perry pears.1 Apples fall into four families: sweet, sharp, bittersweet and bittersharp.2 The cider ferments naturally, with no pasteurization and no added gas, acid or sugar, and must reach at least 4.5 percent alcohol.2 At least 21 days pass between pressing and distillation, 30 for Domfrontais.2 It takes about 18 kilograms of apples to make 13 liters of cider, which distill to 1 liter at 70 percent.6

The three appellations differ mainly in still and fruit: - Calvados — much of Lower Normandy plus parts of neighboring departments; any method allowed, mostly column still; at least two years in oak.1 - Calvados Pays d'Auge — the eastern Calvados department; double distillation in a pot still is mandatory; no more than 30 percent perry pears.1 - Calvados Domfrontais — pear country in the south; column still only; at least 30 percent perry pears; at least three years in oak.1

How to taste it

A tulip-shaped glass for old Calvados.5 Young Calvados works over ice or in cocktails; the Apple Toddy appeared in Emile Lefeuvre's French cocktail handbook in 1889.5 Serve a VS ice-cold with smoked fish, a VSOP with Normandy cheeses, an older bottle with tarte Tatin or dark chocolate.5
