Pierre Huet has worked the Cambremer cider route since 1865, and this VS Calvados starts with cider pressed from 25 apple varieties grown across their 30-hectare orchards, fermented a full year before double distillation in a traditional copper alembic. Two to three years in oak give you baked apple sauteed in butter with a whisper of mint. Pour it over ice with tonic and a wheel of lime, or build it into a cocktail.
