Thirty years is a long stretch for any rum to spend in oak, and Zafra's Master Series 30 spends it entirely in bourbon casks under Panama's tropical heat, which pushes maturation fast and deep. Distilled from sugarcane molasses on old column stills, it comes home smelling of vanilla, brown sugar and dried fruit, with baking-spice and caramel layered through a long, warming finish.
