Named for old Echigo—the historic province now called Niigata—this junmai comes from Japan's oldest sake house in Nagaoka, brewing since 1548. Made from local Niigata rice under the region's classic light, dry style, it opens with clean mineral water notes and a light citrus-and-spice lift, finishing crisp rather than sweet. Niigata brewers built this style to drink both ways: chilled it's smooth and refreshing, warmed it turns rounder with more rice character. Pour it alongside grilled fish or a simple soy-based dish.
