XiFeng Jiu carries forward Shaanxi's Fengxiang tradition, one of the four spirits singled out at China's 1952 National Alcohol Appraisal Conference. Sorghum ferments in earthen pits with a wheat-barley-pea starter for a brief ten-day cycle, then rests in rattan baskets lined with cloth and wax rather than oak. The result is Phoenix Aroma baijiu: tart green apple and cherry on the nose, earthy honey and grass on the palate, finishing sweet and long. Serve neat in small glasses alongside dumplings, roast duck, or other bold, savory dishes.
