XiFeng Jiu carries forward Shaanxi's Fengxiang tradition, one of the four spirits singled out at China's 1952 National Alcohol Appraisal Conference. Sorghum ferments in earthen pits with a wheat-barley-pea starter for a brief ten-day cycle, then rests in rattan baskets lined with cloth and wax rather than oak.
