Wuliangye Crystal comes from Yibin, Sichuan, where distillers have worked the same mud-pit cellars for over 600 years, dating back to the Ming Dynasty. This strong-aroma baijiu is built from five grains — sorghum, rice, glutinous rice, wheat, and corn — fermented with a traditional yeast starter called baobaqu. Expect a floral, peppery nose leading into pineapple and licorice on the palate, finishing crisp. Bottled at 104 proof, it's best sipped slowly, neat, in small cups, the traditional way.
