Wu Liang Ye means "five grain liquid" — sorghum, rice, glutinous rice, wheat, and corn fermented together in mud pits in Yibin, Sichuan, some dug during the Ming dynasty and still working today. That long, layered fermentation is the source of its nongxiang (strong aroma) style: a peppery, floral nose leading into pineapple, licorice, and meadow-grass notes on a smooth, mellow palate. Sip it slowly at room temperature from a small glass, the traditional way, alongside savory small plates.
