After initial aging in American oak, the vatting spends 12 months finishing in Icewine hogsheads sourced from Inniskillin, Ontario's leading icewine producer — a first for Irish whiskey. Non-chill filtered, it opens with peach and apricot over Pot Still spice, moves into floral blossom and nutty oak, and finishes on mango-lychee fruit compote. Pour neat or on a single ice cube after dinner.
