Winterville's crew at ASW Distillery in Atlanta went further: after resting their citrus-and-marigold-forward gin in former Fiddler Rye barrels, distiller Jerry McCall dropped in sage, grains of paradise, and coffee to react with the wood itself, treating the barrel like another botanical. The result lands at 100 proof with citrus, gingerbread, and sweet oak on the palate, and took gold at the San Francisco World Spirits Competition. Pour it neat or in a Negroni to let that oak warmth show.
