All of our flavor is created naturally during the fermentation of whey, the cuts we carefully make during distillation, and the process we take to let that flavor fully blossom and mature through oak aging.

"Tonight’s dram is the most unique dram I’ve ever sipped – not the flavor profile, but the mash bill. Not made from malted barley, barley, corn, rye, wheat, mullet, or any other grain, Wheyward has created a whole new category that they term Wheyskey – whisky made from whey – a milk product (gluten-free, grain-free, and lactose-free) – appropriately (for a milk-based product), from a woman-owned company. It opens with underripe pears, vanilla, light caramel, and hints of lightly-charred oak; followed by toffee and mildly-spicy ginger, with some bitters in the background to keep it from being too sweet, and a whiff of tobacco smoke. It is light and crisp (a summertime dram), but would definitely benefit from more aging/maturity to get more of the woody flavors. They ladies at Wheyward have some work to do, but this is an interesting start. Drink slow, drink long, drink a variety, drink often."
