Most single malts let the barrel do the talking. Westland flips the script with Colere Edition 1, made entirely from Alba, a barley variety grown outside the commodity system in Washington's Skagit Valley and developed with the WSU Bread Lab. Matured only in used casks so the grain, not the oak, leads: expect roasted pineapple, something floral, and a peppery, gingerbread-cake finish. Part of the distillery's experimental Outpost Range. Pour it neat, add a few drops of water, and taste terroir in whiskey.
Tasting notes

Nose: Roasted pineapples commingle with a floral character on the nose with Life cereal, grape soda, cookie dough, and roasted almond notes joining.

Palate: The pineapple headlines a fruity palate with original Wheat Thins, black pepper, and fig bar, and gingerbread cake driven by the malt.
