Most mezcal talk starts and ends with smoke, but Wahaka's Espadín Joven earns its balance the old way. Master mezcalero Alberto Morales roasts estate-grown, 7-8 year Espadín agave for 3-5 days in an earthen pit over ocote pine, crushes it with a stone tahona, then ferments it 10-12 days in pine vats with wild yeast before double-distilling in copper stills. The result: campfire smoke woven with earthy agave, green herbs and citrus. Try it neat, or in a smoky mezcal margarita.
