Vuelo del Aviador's Grand Reserva Plata comes from blue weber agave grown 7 to 9 years on their Jalisco estate, still cooked the slow way — 72 hours in clay ovens — before a double pass through copper pot stills. Unlike most blancos, this one rests four months, picking up a whisper of oak. Expect honeysuckle and vanilla up front, then pear, apple, and honey settling into a smooth, gently figged finish.
