Extra Añejo only requires three years aging to earn the label — Volans holds theirs three-plus, made at Jalisco's El Pandillo distillery under Felipe Camarena from Blue Weber agave grown at 6,800 feet in the Los Altos highlands, using only rain, spring, and well water with nothing added. Expect sweet cooked agave and cinnamon on the nose, then vanilla, smoked almonds, and butterscotch on the palate. Pour it neat, slow, after dinner.
