From Jesús María in the Los Altos highlands of Jalisco, this añejo starts as a blanco blended from three tahona-crushed batches, each drawn from a different water source, then rests just over a year in a mix of American, German, and French oak. Estate-grown Blue Weber agave from Master Distiller Felipe Camarena's land around El Pandillo Distillery gives it a rich cooked-agave backbone, layered with vanilla, dried fruit, butterscotch, and leather. Pour it neat to sip slowly, or alongside a dinner of grilled meats and smoky sides.
