Vitkin Pinot Noir comes from the Ella Valley, one of the few Israeli sites coaxing real character out of this famously finicky grape. Winemaker Assaf Paz ages it roughly ten months in large-format French oak, favoring restraint over heavy extraction, so the wine stays light-bodied and fresh. Expect ripe red cherry and berry fruit laced with earthy, mineral undertones and a lifted floral edge. Pour it slightly cool alongside roasted salmon, mushroom dishes, or a simple herb-crusted chicken to let its bright, savory side shine. Certified kosher (OK, Chareidim - R’ Anschel).
