Yunikko comes from a rare seam of pre-phylloxera Bobal vines in Spain's Utiel-Requena region, ungrafted and still growing on their original roots after more than a century. The wine ferments and ages for fourteen months in tinajas, traditional clay amphorae that soften the tannins while keeping the fruit bright and giving the wine a subtle mineral edge. Expect a medium-bodied red with firm structure and polished tannins — pour it alongside grilled lamb or a hard aged cheese.
