Meet Vidiano at its most alive: young winemaker Iliana Malihin coaxes this ancient Cretan grape from vines grown 600-900 meters up in the mountain villages of Rethymno. Grapes are destemmed, pressed gently into stainless steel, and left to ferment with native yeasts before six months aging on lees — a low-intervention approach from organically farmed fruit. The glass opens with white peach, pear, and citrus leaf, layered with chamomile and a mineral, herbal finish. Pour it alongside grilled fish, briny olives, or a simple Mediterranean spread.
