Barton 1792 Distillery in Bardstown, Kentucky has been quietly turning out well-priced bourbon since 1879, and Very Old Barton at 100 proof is its full-strength workhorse. Sazerac lets the whiskey speak for itself here — no flashy story, just a straightforward mash bent toward rye giving cinnamon, clove, and a touch of mint against caramel and oak. It once carried a bottled-in-bond label and a six-year age statement, both dropped as the blend shifted younger. Pour it over one ice cube or into an Old Fashioned.
Tasting notes
Nose: Cinnamon, apples, pears, baking spices, caramel, oak & leather; alcohol is noticeable.
Taste: Caramel, char, oak, cinnamon & moderate simple syrup sweetness
Finish: Juicy fruit gum appears early but gives way as cinnamon returns to dominance; a black pepper spiciness joins it;
