Meet a pechuga mezcal made by Temo and Mateo García, sons of the late Aquilino García López, in the mountain village of Candelaria Yegolé, Oaxaca. It starts with bat-friendly Espadín, milled by a mule-drawn stone tahona. On the second distillation the family adds local apples, pineapple, guava, banana, almonds, raisins, tejocotes, chocolate, and a chicken breast — the traditional pechuga touch that folds savory depth into the fruit and smoke. Pour it neat and slow, for a holiday table or a quiet evening of discovery.
