Overview

Georgia's oldest white grape, fermented and left on its skins in buried clay qvevri, which is where the amber colour and the grippy, tea-like tannin come from. Dried apricot, orange peel and walnut skin, bone dry and savoury. Treat it like a light red — serve it cool rather than cold, next to roast chicken or aged cheese.
