Overview

Wild maguey lamparillo (Agave asperrima), a slow northern desert agave, harvested off a 24,000-acre ranch in Mapimí, Durango, inside the Zona del Silencio. Roasted three days in a volcanic-stone pit over mesquite and pine, milled by hand with an ax, fermented on wild yeast in oak-lined ground wells, twice distilled in copper.
