A dessert wine built on patience: Tzafona harvests its Vidal grapes in Niagara-on-the-Lake only after they've frozen solid on the vine, concentrating the juice into something richer than table wine ever gets. Expect honeyed apricot and peach up front, with lychee and citrus keeping the sweetness in check. Pour it chilled, in small glasses, alongside dark chocolate or a slice of honey cake.
