High Desert Gin

This recipe was inspired by Thai pomelo salad, which we discovered on our first trip to Bangkok. A pomelo is a ginormous citrus fruit, which is impressive in its own right. (Think of a grapefruit—the pomelo would be the grapefruit’s big-ass older cousin who grew up in the tropics.) When the tangy pomelo is paired with a fiery, sweet green salad chocked full of fresh herbs and playfully balancing a wide array of spices, the result is pure magic. Our citrus-forward gin attempts to recreate this balance: juxtaposing basil and lime leaf, green cardamom and coriander, angelica root and long pepper, grapefruit and lime zest, and with the classic gin notes of juniper. Perfect in a Tom Collins. (Also happens to go well in your Siam Sling—slow sipping beneath the palm fronds as Bangkok buzzes around you, and that new tattoo just won’t stop burning.)

Spirits

Here at Tumbleroot, we make all of our spirits by hand using 100% organic ingredients. Yes, we’re gluttons for punishment, and we tend to do everything the hard way. Also, we’re honest to a fault, so we would never describe our products as “craft” or “hand-crafted” unless we really made them ourselves in a traditional way using only the best ingredients. From scratch. All of our spirits are distilled and aged in our brewhouse following long-standing methods, starting with the fermentation of 100% organic basic ingredients and finishing with purified water from the southern tip of the Sangre de Cristo Mountians. When flavoring our spirits after distillation, we use only organic, garden grown, and wild harvested ingredients. This is true of our packaged products as well as the infusions we create and serve in our tap rooms. When creating our artisanal elixirs, we cut no corners and spare no expense, and this is why we’re proud to call them truly crafted spirits.

Tumbleroot was established in 2018. With a combined brewery and distillery production space, we make a wide variety of beer, spirits, liqueurs, bitters and canned cocktails. Made from-scratch, our products feature organic, garden grown and wild harvested ingredients. Our beers have won medals at national competitions including the Great American Beer Festival and the National Honey Board Honey Beer Competition. We have won numerous local awards for our products, and in 2020, the readers of Edible Magazine named Tumbleroot the best producer of distilled spirits in New Mexico. Our production space has an intimate tasting room and bottle shop where guests can learn more about us, sample our products, and enjoy draft beer and craft cocktails. We also offer tours every Wednesday and Thursday at our Bisbee Location.
