Rum from Japan? Okinawa's warm climate makes it happen. Tokyo Night is distilled in copper pot stills from local Okinawan sugar cane molasses, fermented for ten to fourteen days before it ever meets the still. The result is an unaged white rum with maritime, iodine-tinged aromas and flavors that drift toward tropical fruit and soft florals, with no added sugar. It earned 95 points at the 2020 IWSC. Built for cocktails, it shines in a bright, citrusy highball.
