Tierra Noble's reposado is made at La Estacada, a distillery perched 7,200 feet up in Jalisco's Sierra del Tigre — one of the highest tequila operations in the world. The altitude slows fermentation, and the Herrera family layers in a secondary malolactic fermentation (a trick borrowed from winemaking) before aging up to a year in American oak. The result: a creamy, buttery reposado with oak spice, vanilla, and a white pepper finish. Pour it neat or over one big cube.
