The Rums of Mexico - Cana Criolla Pedro Bautista
Cultivated by Daniel Vega Santiago in the arid village of Zoquiapam Boca de Los Ríos, Oaxaca, this yellow-colored, hearty cane variety grows amongst columnar cactus and biznagas, and is irrigated from water drawn from the nearby Río Monteflor. It was distilled by local maestro Pedro Bautista on a handmade, wood-fired four plate continuous copper still.
Sourdough, apricot and mango on the nose. Almond, currants, bubblegum and sour cherries on the palate.
