Ireland had gone decades without a cask strength triple-distilled whiskey until Walsh Whiskey revived the format in 2008, and this annual release has been evolving ever since. Each year founder Bernard Walsh hand-selects casks of aged Single Malt and Single Pot Still whiskey, marries them together, and rests them in ex-bourbon American oak, then bottles it undiluted and non-chill filtered at cask strength (roughly 55% ABV, varying by vintage). Expect orchard fruit, honey, and baking spices building to a nutty, oak-spiced finish. Pour neat, with a splash of water to open it up.
Tasting notes
Aromas: Orchard fruits, vanilla and nuttiness.
Flavour: Peach, apple blossom, fig and honey.
Finish: Oak spices and toasted almonds.
