Tapatio Blanco comes from La Alteña, the Camarena family's Arandas distillery running since 1937, where blue weber agave grown in the Jalisco highlands is still cooked in brick ovens and crushed with a traditional tahona wheel. Double-distilled in copper pots and rested six months in stainless steel, the 80-proof blanco keeps things bright: cooked agave and citrus up front, anise and cinnamon through the middle, closing on white pepper and mint. Wirecutter named it a standout blanco. Pour it into a margarita or sip it neat to taste the highlands.
