Starward is a Melbourne distillery that leans into weather most whisky makers avoid: the city's swing-every-few-hours climate pushes spirit deep into the barrel and back out, speeding up maturation. This single barrel — number 5680, bottled at cask strength (112.8 proof / 56.4% ABV) — spent its time in a French oak wine barrique from Barossa Valley, previously home to Shiraz, Cabernet, or Pinot Noir. Expect rich red-berry and oak-spice character. Pour it neat to let that wine-cask influence unfold.
