Stags' Leap Winery didn't chase Cabernet like its Napa neighbors — in the 1970s, Carl Doumani bet the estate's flagship spot on Petite Sirah instead, planted on some of the valley's oldest vines. The result is a dense, structured red: blackberry and black cherry fruit layered with cocoa, vanilla, and earthy spice, built from a short maceration and 16 months in American oak. Big tannins mean it rewards a little patience — decant it before serving, and pour alongside a grilled ribeye or aged blue cheese.
