Sotol isn't tequila or mezcal — it's distilled from Dasylirion, a wild plant harvested across the Chihuahuan Desert of northern Mexico, and this organic, unaged expression leans into that rugged terroir. Hacienda de Chihuahua slow-cooks the plants in masonry ovens, ferments naturally with champagne yeast, then double-distills in a copper column still to 45% ABV. Expect pale straw color with smoky, leathery notes threaded with tobacco and oak — lighter in body than tequila. Sip it neat, or use it to give an agave-based cocktail a smokier backbone.
