Snow Leopard Rare skips wheat and rye altogether, distilling instead from spelt — an ancient grain almost nobody bothers with. Made in small batches at Poland's century-old Polmos Lublin distillery, it runs through six distillations and two rounds of charcoal filtration before bottling at 40% ABV. Expect a soft vanilla nose, a nutty creamy body, and a peppery finish. Founded by a former Allied Domecq exec, a share of every bottle's profit funds snow leopard conservation.
