Siete Leguas has been doing things the slow way since 1952 — one of the last tequila houses still using a mule-pulled tahona wheel to crush cooked agave in brick ovens at their Atotonilco distillery. This Añejo blends output from two sister facilities, then rests 18 months in American oak, picking up vanilla, dried fruit, and baked apple around a still-present agave backbone with a whisper of black pepper and cinnamon. Sip slow, neat or in a barrel-aged Old Fashioned.
