Cotswolds Distillery grows its own barley in the English countryside, floor-malts it locally, then matures the spirit fully in Spanish and American oak seasoned with Oloroso and Pedro Ximenez sherry, not just finished but sherry-aged start to finish. The result: dried fruit, dark chocolate, a whisper of spice, roasted almonds trailing into peppery oak. Bottled non-chill filtered at 57.4% ABV, it earned Double Gold at the San Francisco World Spirits Competition. Pour it neat to let the sherry influence unfold, or over one big ice cube.
Tasting notes
Nose: Toasted (and slightly burnt) fruitcake, with stewed, spiced apple, brown sugar, and candied ginger.
Palate: Flamed orange peel, fruit and nut dark chocolate, cherry jam, and a touch of vanilla ice cream.
Finish: Black pepper balances heaps of dried berries.
