This Millbrook, New York orchard blends fresh-pressed juice from 120-plus apple varieties with their own apple brandy, then rests it in used brandy barrels. The brandy behind it is double-distilled in a French Charentais pot still and aged in toasted American oak with a Madeira finish. At a gentle 17% ABV, it pours beautifully chilled before dinner or alongside a cheese board.
